Toffee Apple Cookies!

I love baking but recently I haven’t had much time to do so but the other day I had a spare few hours in which I made some of the nicest tasting cookies I’ve baked in a while. I wanted to make something slightly festive and different so I went with toffee apple cookies.
1.       Pre- heat your oven to 180C.

2.       Mix 175g unsalted butter and 140g golden caster sugar together until it is creamy, I used a electric hand whisk for this but you can use a kitchen aid or a wooden spoon also.

3.       Stir in 2 egg yolks gradually (I didn’t realise it was just the yolk until typing the recipe now…) Add 85g of chopped toffees, 85g dried chopped apple and 225g self- raising flour to the mixture.

4.       Make sure the mixture is combined well, add some milk (2 tbsp maximum) if the mix is too dry. Roll the mix into small balls the size of walnuts.

5.       Put the balls evenly spaced apart onto a greased baking tray. I used grease proof paper as well as a small amount of butter.

6.       Before putting them into the oven brush the top of the balls with milk (I also didn’t see to do this… opps) Bake for 8-12 minutes until golden. Leave them to cool on a wire cooling rack and you’re done!

 I really enjoyed making these cookies as I thought they were very easy, next time I make them I will follow the recipe more carefully though. Enjoy!
